What is the most delicious sake we can possibly create? This single question was the starting point for "Mugen ff," a sake that seeks to break boundaries and achieve an infinite potential for flavor. The "ff" represents fortissimo—a musical direction to perform with maximum strength and passion. This is our brewery's fortissimo expression, a powerful and endlessly captivating sake.
To achieve this peak performance, we selected two of the finest sake rice varieties: Yamada Nishiki, the "King of Sake Rice," and the character-rich Omachi. By brewing them together, we've composed a complex harmony of taste. "Mugen ff" opens with a powerful and juicy wave of umami that expands across the palate, layered with a sophisticated, elegant sweetness. It is a bold and impactful experience, yet it is held in perfect balance by a sharp, beautifully crisp finish (kire).
The true magic of "Mugen ff" lies in its lingering aftertaste (yoin). The rich flavors don't simply disappear; they resonate, making you crave the next sip to experience the wave of flavor all over again. Our Past, Present, and Future
Seto Shuzo was founded in the first year of the Keio era (1865). We are a sake brewery located in the town of Kaisei in Kanagawa Prefecture. The Ashigara Plain, where Kaisei is located, was well-suited for rice cultivation due to its flat land and abundant water sources, and in the past, the area was almost entirely covered by rice paddies.
The specific area where Seto Shuzo is located was particularly known for its sake rice production and was even called "Sakada Village" (Rice Paddy Village). Seto Shuzo prospered with popular brands like its signature "Sakadanishiki." At its peak, the brewery produced 600 koku (approximately 100,000 liters) of sake. However, in 1980, the brewery had to cease its own brewing operations due to difficulties in securing a Toji (master brewer) and other kurabito (brewery workers).
With a desire to convey the charm of Kaisei, a town with pure and delicious water, and to revitalize the town through the brewery, we decided to resume brewing. This marked a fresh start from scratch, a full 38 years after brewing had been suspended. The old brewery was dismantled, and a new one was built. We also had a wonderful encounter with an exceptional Toji.
When it came to the crucial task of deciding what kind of sake to make, we established three core principles: [Tradition, Innovation, and the Spirit of Kaisei].
