An Ultimate Expression of Flavor. This sake, "ff" (Fortissimo), represents a profound evolution of the "Ashigarigo" series from Seto Sake Brewery. Born from a spirit of continuous challenge, "Zerogo ∞" (No. 0 Infinity) was created to draw out the maximum potential of hydrangea flower yeast, endlessly pursuing the ultimate form. This foundation has been refined to produce a beautifully complex and sweet taste pushed to its absolute limit.

Inspired by the rich seasonal scenery of Kaisei Town—with its panoramic countryside and views of the Hakone mountain range—this sake is brewed with yeast extracted from the town’s symbolic hydrangea flower. The result is a taste that has captured the attention of top chefs worldwide, with many remarking it’s the most delicious sake they have ever tasted.

Tasting Notes

Experience a sweet and refreshingly cool aroma that leads to a remarkably soft and juicy first sip. The palate unfolds with a burst of concentrated, grape-like fruitiness and a lush sweetness. This is perfectly balanced by a crisp, cool acidity reminiscent of a fine white wine. A faint, pleasant bitterness provides an elegant accent, creating a harmonious and plump flavor that leaves a gracefully lingering impression.

The Craft: "Jōjō-shikomi" Brewing

"ff" is crafted using an innovative method named "Jōjō-shikomi" (乗醸仕込み), or “Layered Brewing.” Similar to the “Kijoshu” method, sake is used in place of water during the brewing process. However, the goal is not the aged thickness typical of Kijoshu, but rather to express the vibrant, fresh, and fruity characteristics of the unique hydrangea yeast. This technique layers the personality of the sake to create a new, expressive masterpiece.

Seto Shuzo Sake Brewery History

Our Past, Present, and Future

1865: Founding

Seto Shuzo was founded in the first year of the Keio era (1865). We are a sake brewery located in the town of Kaisei in Kanagawa Prefecture. The Ashigara Plain, where Kaisei is located, was well-suited for rice cultivation due to its flat land and abundant water sources, and in the past, the area was almost entirely covered by rice paddies.

The specific area where Seto Shuzo is located was particularly known for its sake rice production and was even called "Sakada Village" (Rice Paddy Village). Seto Shuzo prospered with popular brands like its signature "Sakadanishiki." At its peak, the brewery produced 600 koku (approximately 100,000 liters) of sake. However, in 1980, the brewery had to cease its own brewing operations due to difficulties in securing a Toji (master brewer) and other kurabito (brewery workers).

2018: Relaunch

With a desire to convey the charm of Kaisei, a town with pure and delicious water, and to revitalize the town through the brewery, we decided to resume brewing. This marked a fresh start from scratch, a full 38 years after brewing had been suspended. The old brewery was dismantled, and a new one was built. We also had a wonderful encounter with an exceptional Toji.

When it came to the crucial task of deciding what kind of sake to make, we established three core principles: [Tradition, Innovation, and the Spirit of Kaisei].
