As the leaves dance and the air turns crisp, the world settles into a beautiful clarity. "Kaze ga Fuitara," or "When the Wind Blows," is a tribute to this moment—a sake that deepens and grows more comforting as the seasons change. It’s for those evenings when you return home from the cold, ready to welcome the first tastes of the harvest with a truly special sake.
To capture the profound flavors of early winter, we turned to a special brewing technique: Tomizu-jikomi. This method uses 10-20% less water than typical brews, creating a highly concentrated moromi (main mash) that allows the innate power and flavor of the rice (polished to 70%) to emerge in full force. The resulting sake is exceptionally rich and full-bodied, yet it avoids being heavy, finishing with a remarkable lightness and a crisp, clean edge.
Enjoy "Kaze ga Fuitara" straight to appreciate its full-bodied character, or explore its versatility by adding a splash of water. Because of its high alcohol content and concentrated flavor, diluting it with 5-15% water can soften its profile and reveal new, subtle tastes. For the best experience, we recommend using a soft, high-quality Japanese water.
This sake has the structure to stand up to robust flavors. It pairs exceptionally well with richly flavored dishes, such as tuna sashimi (maguro), grilled eel (unagi), and yakitori with sauce.

Our Past, Present, and Future
Seto Shuzo was founded in the first year of the Keio era (1865). We are a sake brewery located in the town of Kaisei in Kanagawa Prefecture. The Ashigara Plain, where Kaisei is located, was well-suited for rice cultivation due to its flat land and abundant water sources, and in the past, the area was almost entirely covered by rice paddies.
The specific area where Seto Shuzo is located was particularly known for its sake rice production and was even called "Sakada Village" (Rice Paddy Village). Seto Shuzo prospered with popular brands like its signature "Sakadanishiki." At its peak, the brewery produced 600 koku (approximately 100,000 liters) of sake. However, in 1980, the brewery had to cease its own brewing operations due to difficulties in securing a Toji (master brewer) and other kurabito (brewery workers).
With a desire to convey the charm of Kaisei, a town with pure and delicious water, and to revitalize the town through the brewery, we decided to resume brewing. This marked a fresh start from scratch, a full 38 years after brewing had been suspended. The old brewery was dismantled, and a new one was built. We also had a wonderful encounter with an exceptional Toji.
When it came to the crucial task of deciding what kind of sake to make, we established three core principles: [Tradition, Innovation, and the Spirit of Kaisei]. For a small brewery, we offer a diverse range of brands. We hope that you will enjoy the experience of choosing which one to drink, as part of the pleasure of Japanese sake.
Seto Shuzo's mastery is expressed through its three signature labels, each telling a different story:

An innovative series exploring the future of sake. Each small-batch creation uses unique yeasts and techniques, designed to be paired perfectly with a specific mood, dish, or occasion.
