This elegant Junmai Ginjo sake is born from the heart of our hometown. It is brewed using a unique yeast carefully cultivated from the petals of the hydrangea, the beloved flower of Kaisei Town. Every year, the town celebrates this symbol with a festival, honoring the hydrangeas that the community has lovingly nurtured along the rice paddy paths. We have poured that same local pride and gentle spirit into every bottle of "Tsuki no Uta."

Our Past, Present, and Future
Seto Shuzo was founded in the first year of the Keio era (1865). We are a sake brewery located in the town of Kaisei in Kanagawa Prefecture. The Ashigara Plain, where Kaisei is located, was well-suited for rice cultivation due to its flat land and abundant water sources, and in the past, the area was almost entirely covered by rice paddies.
The specific area where Seto Shuzo is located was particularly known for its sake rice production and was even called "Sakada Village" (Rice Paddy Village). Seto Shuzo prospered with popular brands like its signature "Sakadanishiki." At its peak, the brewery produced 600 koku (approximately 100,000 liters) of sake. However, in 1980, the brewery had to cease its own brewing operations due to difficulties in securing a Toji (master brewer) and other kurabito (brewery workers).
With a desire to convey the charm of Kaisei, a town with pure and delicious water, and to revitalize the town through the brewery, we decided to resume brewing. This marked a fresh start from scratch, a full 38 years after brewing had been suspended. The old brewery was dismantled, and a new one was built. We also had a wonderful encounter with an exceptional Toji.
When it came to the crucial task of deciding what kind of sake to make, we established three core principles: [Tradition, Innovation, and the Spirit of Kaisei].
